Man, it’s been a while.

This year brought some major changes. Some chapters closed, others opened—but every change has been about growth. Growth isn’t always comfortable, but it has a way of leading you exactly where you’re meant to be.

One thing that hasn’t changed is my love for food.

The way I see it has only deepened.

When I look at a whole vegetable, I don’t just see an ingredient. I see time. I wonder how long it took the earth to shape it, how nature evolved alongside us, and how generations before us learned to cultivate, preserve, and transform it into nourishment.

The kitchen has never been just a kitchen to me.

It’s a laboratory.

Every day is an experiment—discovering the relationship between heat, texture, flavor, and the invisible exchange of energy between every ingredient I choose. Fire changes food. Time changes food. Even the smallest adjustment can completely transform the final result. That’s what keeps me curious.

I’m still in the lab.

Still asking questions.

Still searching for the balance between modern cuisine and historical tradition.

Can innovation exist without forgetting where we came from?

Can the techniques of today honor the wisdom of yesterday?

I believe they can.

Every dish is another experiment, another conversation between the past and the future—and I’m excited to keep exploring where that journey leads me..
